Detailed Description
Bozal Pechuga is made with agave Cupreata as a limited release from Mazatlan, Guerrero. After the second distillation a cooked chicken marinates with locally sourced fruits, chiles, citrus fruits, raisins, cinnamon and clove. After the chicken has fully marinated, it’s added into the third and final distillation.
Bozal Pechuga Mezcal Tasting Notes
Nose: Smokiness is softened noticeably by the protein and wild fruit.
Palate: Flavors of roasted fruit, subtle minerality.
Finish: Dry finish.
Distillery Information
Bozal Mezcal Cuixe Single Maguey is made from wild cuixe agave, a subspecies of the Karwinskii Family of agave, harvested in the village of San Baltazar, Oaxaca. The distillery uses centuries old methods of distillation: cooking the hearts in earthen pit ovens, crushing them using a tehona wheel, using wild yeast for fermentation, and distilling in copper pot stills.
