Detailed Description
“A little aeration time coaxes out a mellow vanilla scent. As with its Bourbon counterpart, this rye is aged in American oak casks, then finished in “white-wine seasoned French oak barrels.” The result is a soft feel and honeyed fruit notes spiced with cinnamon and nutmeg.”The advantages of the “Dual Cask” aging method are really noticeable with Rye. We utilize the soft, post-fermentation components of white wine to impart aroma and texture. When these 2-3 year old French oak barrels are emptied, and our Rye goes in for its “Dual Cask” aging period. The result is a rich, round, velvety-smooth Rye Whiskey, with none of the harsh “grassy” character that sometimes can detract from the enjoyment of Rye.
Filibuster “Dual Cask” Rye Tasting Notes
Nose: Cinnamon bark, oak spice and tropical fruit play off of more classic Caramel and Vanillin aromas.
Palate: Very Rich and soft texture, Spice, Caramel, Honey and hints of Rye toast.
Finish: Warm and creamy, notes of baked apple, very long.
Distillery Information
Filibuster is a Virginia-based distillery that (ironically) started out as a blending house with no plans to distill. Then, I can only imagine the inexorable draw as the craft Whiskey industry sang its siren song and the company purchased a defunct apple processing plant in the Shenandoah valley, in Virginia, and began installing stills. As is the case with just about every other distillery or “distillery” opened this decade, the liquid is not quite ready to barrel yet. Best guess, they started distilling in 2017 so expect real Filibuster juice around about 2021.
