Detailed Description
Our Blanco is crafted from estate grown ripe blue agave. Before baking, the green hearts are taken out of each and every agave, which eliminates a vegetal taste and offers more sweetness. After the agave has been evenly baked and crushed with “Frankenstein” (mechanical tahona), it is then fermented for four to five days using only natural yeasts.
Pasote Blanco Tequila Tasting Notes
Nose : An herbaceous aroma of perfectly roasted agave, similar to celery root and lime.
Palate: The palate opens with zesty citrus leading to a combination of salt, jicama, and taro root.
Finish: Long, clean, and ever so slightly prickly with white pepper.
Distillery Information
Felipe and his sons have established El Pandillo Distillery is a place where they honor their family’s proud tequila tradition and quality standards while innovating for today. The name of the distillery, El Pandillo was the name of Felipe’s grandfather’s favorite bull and the tahona stone you see was the only surviving piece of what would have been their family’s distillery during the Revolution.
